Pasta shapes that evoke small animals from the garden or fields are not rare. The origin of the Galletti is not certain but it can most likely be traced back to the Ligurian territories. It is a shape that reproduces the Chifferi Rigati by adding a wavy ribbon at the top similar to a cockscomb. Thanks to the double opening and the distinctive grooving they are able to mix even the most liquid and elusive sauces, capturing all the seasoning. Cockscombs are excellent simply with tomato sauce, but they are also very good with beef or pork or vegetable sauces.
