Quadretti belong to the small pasta family to be cooked in broth. Classic recycled pasta, it was generally obtained, like maltagliati, from the leftovers of the pastry that was prepared for the fettuccine of the feast day. They are especially indicated in the preparation of clear soups, such as broths or consommè, also enriched with croutons or vegetables cut into thin strips. Other names used to indicate the "Quadrucci" pasta shape: Quadretti. Quadratini. Quadrettini. Lucciole.
