Mafaldine, or ricce, also known as reginette (Italian for little queens) or simply mafalda or mafalde, is a type of ribbon-shaped pasta. It is flat and wide, usually about 1 cm (½ inch) in width, with wavy edges on both sides. It is prepared similarly to other ribbon-based pasta such as linguine and fettuccine. It is usually served with a more delicate sauce. Mafaldine were named in honor of Princess Mafalda of Savoy (thus the alternative name "little queens”). Other names used to indicate the "Mafaldine" pasta shape: Mafalde. Ricce. Fettuccelle ricce. Nastrini. Reginette. Reginelle. Fettucce ricce. Frese. Tagliatelle nervate. Ricciarelle. Ricciolone. Sfresatine. Manfredine.
Rosito Bisani is an U.S. middleman who put his name onto pasta machines made by other companies;
for example the double sheet ravioli machine Rosito Bisani PR30 is just the double sheet ravioli machine Italgi model PR30. In the same way, the pasta extruder Rosito Bisani TR95 is just the pasta extruder La Pastaia model TR95, and so on. Email to info@ostoni.com the photo of your pasta machine; we'll tell you immediately who is the real manufacturer of the pasta machine you own !
